OUR TEA STORY

200 Years with the Mountain

200 Years with the Mountain
In the mountains of Kami-Obuku, Okuyamada, in Ujitawara, there is a great zairai tea tree said to have been planted in the Edo period. It is estimated to be more than 200 years old, and its branches spread over about 300㎡.

The tea bushes that grow naturally in this area have long been called yamacha, or “mountain tea.” Zairai is tea grown from seed, so each bush is an individual. Its roots run deep, and the soil and climate of the land show directly in its aroma and flavor.

We use no pesticides and no chemical fertilizers. We hand-pick the new buds and wither them slowly, without steaming, to make white tea. We hope you enjoy the gentle, soft flavor of a mountain tea that has grown for two centuries.

HOW TO BREW

White tea is neither steamed nor rolled; the leaves are simply plucked and left to oxidize, so their structure stays intact. The water takes time to work its way into the leaves, but in return the tea gives fifteen or more infusions, changing as you go.

InfusionLeaves: 4g TEMPERATURE WATER Leaves Time TASTING NOTES
1st–3rd infusions 85℃ 100ml 4g 60 sec Fresh aroma with a gentle sweetness
4th infusion onward 90℃ 100ml — 60 sec Honey and cinnamon notes emerge, with a fuller, richer body

Water amounts are per infusion. "—" means the same leaves are used as in the first infusion. Temperatures and times are guidelines, so adjust them to your taste.

Follow the leaves

White tea leaves take time to open fully. If the leaves still look curled, extend by another 30 seconds or so.

About water

In hard-water regions such as Europe and North America, the aroma can be more difficult to draw out. Lower the water temperature for each infusion by 5°C and extend the steeping time by 30 seconds. Soft water with a hardness below 50mg/L is ideal.
